At Las Quince Letras, we believe that cooking begins long before it reaches the table. It originates in the earth, in the seeds, in the water, in the hands of those who cultivate it, and in respect for the cycles of nature.

That's why we created Huerto La Pochota,an agroecological project that seeks to bring food production closer to our kitchen, promoting sustainable practices that contribute to environmental stewardship, the conservation of natural resources, and more mindful eating.

Manifesto

This space arose as a response to the growing need to know the origin of food and to build a more transparent and responsible food chain. Through the garden, we strengthen our commitment to a gastronomy that respects the land, values ​​producers, and promotes the consumption of fresh, local ingredients grown according to organic farming principles.

The project integrates various sustainability strategies, such as rainwater harvesting, solar energy use, efficient irrigation systems, and the production of compost and worm castings from organic waste generated at the restaurant. In this way, we transform some of our waste into nutrients that return to the soil, closing natural cycles and reducing our environmental impact.

At Huerto La Pochota, we cultivate species that are part of the agricultural and gastronomic identity of Mexico and Oaxaca, as well as diverse traditional varieties that represent centuries of agricultural and cultural knowledge.

More than just a productive garden, La Pochota is a space for learning, research, and conservation. We seek to share with our diners the importance of responsible agriculture, foster greater awareness about the origin of food, and demonstrate that gastronomy can be a tool for protecting biodiversity and strengthening our relationship with the land.

This project represents our way of giving thanks for all that nature provides. Every seed planted, every harvest, and every ingredient that reaches our plates is an invitation to build a more sustainable, just, and respectful future for our environment.

Because caring for the earth is also caring for our culture, our food, and future generations.
